Did he say easy? Dead easy. Once you’ve chopped an ingredient or two, all you do is whirl it all together in your food processor or blender.
Many blue cheese varieties are quite salty, so it is especially important to taste the dressing before adding any additonal salt. You may not need to add any. And not only with this recipe, tasting is essential to any good cooking.
Basic Blue Cheese Dressing
This is the easiest of the three. It’s great on a salad of mixed greens. If you want a smoother dressing, add all the cheese at one time, but it’s really great with the intense little nuggets of blue.
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1 tsp minced garlic
- 1/4 cup crumbled blue cheese
- 1/2 tsp freshly ground black pepper

- salt to taste
- another 1/4 cup crumbled blue cheese
- In a food processor or blender, process the first group of ingredients.
- Taste and add salt if necessary. You may not need to add any depending on how salty the blue cheese is.
- Str in the remaining 1/4 cup blue cheese crumbles.
This dressing is enhanced with a hint of herbs and just a bit of a kick from the horseradish.
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tsp Champagne vinegar
- 1 Tbsp finely minced onion
- 1 clove garlic, finely minced
- 2 Tbsp snipped fresh chives
- 2 Tbsp flat-leaf parsley or celery tops, finely chopped
- 2 tsp fresh lemon juice
- 2 dashes Worcestershire sauce
- 1 tsp sugar
- 1 tsp cream-style horseradish
- 1/2 tsp freshly ground black pepper

- 1/2 cup crmbled blue cheese
- In a food processor or blender, process the first group of ingredients.
- Taste and add salt if necessary.
- Str in the blue cheese crumbles.
Calling this a sauce rather than dressing only indicates that this bad boy is a dynamite topping for steaks, chops or even a burger.
- 1/4 cup jalapenos, chopped
- 2 Tbsp heavy cream
- 2 Tbsp sour cream
- 1/3 cup mayonnaise
- 1/2 cup coarsely chopped cilantro
- 2 Tbsp fresh lemon juice
- 1/4 tsp freshly ground black pepper

- salt to taste
- another 1/4 cup crumbled blue cheese
- In a food processor or blender, process the first group of ingredients.
- Taste and adjust the amount of spice. Add more jalapenos if you like it spicier, or add more sour cream if it needs taming. Add salt if necessary.
- Str in the blue cheese crumbles.
